While summer doesn't officially begin until June 20th, many of our favorite pairs of shorts have begun their annual migration from the depths of our dressers back into the spotlight. The pools are busy, sweat dripping, and perhaps most importantly, ice cream melting! All of us here at Rainbow Cotton Candy call Arizona home, and if there is one thing Arizona natives know how to do, it’s how to stay cool in some blistering temperatures. To kick off a summer that can’t seem to come soon enough, we wanted to take a moment to share our favorite cotton candy ice cream recipe. Perhaps the best part of this recipe besides the taste, is how easy it is to whip up!
What you’ll need:
-2 cups heavy whipping cream
-1 can sweetened condensed milk
-2 tsp cotton candy flavoring (found online, in craft stores, and candy making aisles!)
-Pink or blue food coloring
-SPRINKLES!
-Rainbow Cotton Candy 1oz bags
-Glass baking dish
-2 mixing bowls
-Whisk
At the beginning of this process it is important to let your whipping cream, condensed milk, baking dish, mixing bowl, and whisk spend some time in the freezer without freezing any of the actual product. This ice cream will melt a smidge faster than your typical store bought so we’ve got to work quickly!
- Beat whipping cream until stiff peaks form
- In separate mixing bowl, quickly mix cotton candy flavoring and sweetened condensed milk
- Gently stir condensed milk mixture & food coloring into whipped cream
- Transfer mixture into glass baking dish
- Fold in Rainbow Cotton Candy and sprinkles to your liking
- Freeze overnight and enjoy the next day!
We absolutely LOVE the way this recipe is able to make the best out of the summer sun while simultaneously satisfying our sweet tooth! We love to finish things off in a bowl or crunchy cone with a matching cotton candy garnish. Don’t be afraid to double or triple this recipe to prepare in bulk and keep at the ready to really impress your family or guests this summer.
